Why rooibos behaves differently

Unlike black or green tea, rooibos is not from the Camellia sinensis plant. It's a South African herb, so it has no tannins. That means it won't turn bitter from long steeping — but it also means you need more leaf and longer time to extract flavor. A 3-minute steep with one teaspoon will always taste watery.

The one exception: cold brew

Cold brewing rooibos produces a lighter, fruitier infusion. If you want a bold hot cup, cold brew will disappoint. Save cold brewing for hot days when you want a refreshing, mild drink — but don't expect the same depth.

Diagnosis: Is your rooibos truly weak?

Symptom: The tea looks pale amber and tastes like hot water with a faint sweet note. You used one teaspoon per cup and steeped for 3–4 minutes. This is the classic under-extraction sign.
Likely cause: Not enough leaf or not enough time. Rooibos is dense and requires more surface area to release flavor. A single teaspoon is fine for black tea but too little for rooibos.
Corrective action: Use 2 heaping teaspoons (about 4–5 g) per 8 oz cup. Pour water at 200–212°F (just off boil) and steep for 7–10 minutes. Cover your cup to keep heat in. Taste at 7 minutes; if still weak, let it go to 10. Rooibos won't get bitter. After fixing, your cup should be deep reddish-brown and taste naturally sweet with body.
When to stop or choose another option: If you've doubled the leaf and steeped 10 minutes but still find it thin, you may prefer a bolder base like black tea. Rooibos is naturally mild; some palates will always find it light. In that case, try a black tea blend instead.
