I've been brewing this at 175°F for two minutes and it comes out so delicate, almost honey-sweet with no bitterness at all. Knowing the leaves are just sun-dried and never rolled or oxidized makes the clean, light cup make total sense.

I usually drink green tea, but this unoxidized white has a much gentler, sweeter flavor with none of the grassiness. You can tell the leaves were just sun-dried since nothing tastes rolled or processed. Steeping it at a lower temperature for two minutes keeps it from getting bitter.

The leaves are whole and fuzzy, and steeping them at 175°F for about two minutes gives a clean, honey-sweet cup with zero bitterness. I've been drinking this every morning for a week and it never turns harsh, even when I forget and leave it sitting.
